Beetroot Cacao Chocolate Brownies

Ingredients
1 2/3 cup wholemeal flour
1 cup coconut sugar
100g 174 Cacao
100g good quality dark chocolate (70% +)
1 tablespoon chia seeds
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup (200g) beetroot (boiled, cooled, peeled and grated)
1/4 cup coconut oil
3 tablespoons oat milk or coconut milk
a little sea salt (optional)
Instructions
1. Preheat the oven to 180°C (350°F). Line a 20cm square baking pan (or
thereabouts) with baking paper.
2. Melt 174 Cacao with the dark chocolate
3. Mix all dry ingredients together in a bowl, then add all wet ingredients (including
the cacao/chocolate mixture) and mix until combined.
4. Pour the mixture into your baking pan and smooth it out.
5. Bake the brownies in the oven for 15-20 minutes (depending on whether you like
them more moist/fudgy or crispy!) Note they do set more over time. Allow them to
cool and continue to set while still in the baking pan.
